Easy and delicious Indian Kulfi

We have all had Covid-19 on our brains lately but not all of it is bad news. This time has given us the opportunity to stop, breath and reflect on upon our lives.

And if you are quarantining with your family it’s been a perfect opportunity to spend quality time. But let’s be honest, all of us from time to time, feel the over-load in the kitchen. As moms we get tired of finishing one meal and being ready for the next. The biggest challenge has been keeping the grocery supply going and making meals that are delicious, healthy (most of the time) and fit for all.

With three generations in the house, I find our kitchen has literally been open 17 hours a day. Of course, my mom would say, “Lucky are the households where families come together. It’s not something to complain about”.

I agree whole heartedly but with one caveat. In my normal habit and desire to look after everyone’s needs I will include my own self. It’s called self-love and its something us women have a tendency to overlook. The only way to achieve this is to set guidelines, ask for help and appreciate everyone doing their share (big, or small) in the kitchen.

Don’t get me wrong. I am the lady of the house and I love to plan, take charge and cook for my family. Through it all though, I refuse to be the one stuck in the kitchen while everyone else enjoys leisure time. I too want to be a part of every fun activity and make beautiful memories.

The kitchen then, has to become a fun family activity place for all. If we plan it right we will never (I know, never say never) feel bitter or upset that we are in this alone. Instead we make amazing memories and some delicious meals. Might I also mention our thankful bodies that will have energy for more fun stuff.

It is also essential that we alternate between easy, fun recipes and more involving and extensive ones. Also, have you noticed how all of the sudden everyone craves dessert every single day? I mean just because Covid-19 is here doesn’t mean Diabetes has disappeared. What happened to the good old striving to eat healthy? Saying no to dessert, unnecessary calories, etc., etc.

Okay, fine! I get it we need to have some comfort foods during this tough time. No denying they bring joy to any day. So here is a dessert that’s been a part of my recipe book for many years. When kids were young it was our favourite summer time dessert. When I made it again after many years it was a big hit.

You will love it because it doesn’t get any easier than this and its delicious:

Easy and delicious Indian Kulfi
Kulfi can be frozen in popsicle containers or any freezer safe containers.

Kulfi (Indian Ice-Cream) Recipe:

  • 1 Can evaporated milk
  • 1 Can condensed milk
  • 1 cup of whipping cream
  • 1/4 tsp cardamom powder
  • 10 ground almonds (optional)
  • 10 ground pistachios (optional)

In a blender whip the whipping cream. Add condensed milk and evaporated milk and mix well. Combine the last three ingredients in a bowl and mix well. Add 1/2 of the dry ingredients to the liquid and mix. Pour the liquid into small freezer safe bowls (or popsicle containers). Use the remainder dry ingredients to garnish the kulfi. Cover and place in the freezer overnight. Enjoy!!

    Sounds and looks delish! I’d like to try the recipe. Do you know what I could substitute instead of cardamom? Not sure I can find it – and if I find it, not sure I would ever use it again…
